    Tips for Success

Here's how to make sure your BBQ Pineapple Chicken Foil Packets recipe turns out perfect!

    • Use a meat thermometer. Check the thickest part of the chicken to ensure it is cooked through. It should reach a temperature of 165 degrees F.
    • Let it cool. Let the foil packets cool down slightly before opening. This will help to prevent any steam burns.
    • Use heavy-duty foil. I like to use sheets of heavy-duty foil for this recipe because it helps prevent any leaks.

    • Swap out the onion for shallots.
    • Omit the thyme and use dried oregano or basil instead.

    FAQ's

Can you cook foil packets in the oven?

Absolutely! You can cook these BBQ pineapple chicken foil packets in the oven. Just preheat your oven to 400 degrees Fahrenheit and place the foil packets on a rimmed baking sheet. Cook for about 20 minutes, or until the chicken is cooked through.

What kind of BBQ sauce should I use?

Any type of BBQ sauce will do, but we think a spicy barbecue sauce paired with the sweet pineapple's juices in this recipe makes for the ultimate smoky-sweet duo. However, if you are not a fan of bbq sauce, you could try teriyaki sauce instead.

Can I grill tin foil dinners?

Yes! These delicious foil packets do excellent on the grill, especially on a charcoal grill. Just be sure to flip the foil packets often and check the internal temperature when you're ready to serve.

Can you make foil packets ahead of time?

Yes, you can! Just follow the recipe up until the point of cooking. Then, assemble the foil packets and store them in the refrigerator for up to 1 day. When you're ready to cook, heat up the grill or oven and cook as directed.

Do I have to use fresh pineapple?

No, you can use canned pineapple chunks or even pineapple preserves. If using canned pineapple, make sure to drain the juice before adding it to the packet.
