- 2 pounds red potatoes, quartered
- ¼ cup olive oil or melted butter
- 2 Tablespoons dry Ranch dressing mix (one 1-ounce packet)
Preheat oven to 450°F. Line a baking sheet with foil for easy cleanup.
Toss potatoes in olive oil, then toss in Ranch dressing mix. Roast for 30-35 minutes, until crisp, brown, and tender. You may want to flip the potatoes over with a spatula halfway through, but it's not totally necessary.
- Potatoes: Red potatoes are our favorite, but Yukon gold or Russet potatoes may also be used.
- Air Fryer: Cook in a single layer for 20-25 minutes in the air fryer at 400 degrees F until crispy, browned, and fork tender. You may need to cook in batches to do the full amount.
- Spicy ranch potatoes: If you want your roasted potatoes to have a little kick, try using the spicy ranch seasoning mix or add ¼ to ½ teaspoon of cayenne pepper when seasoning the potatoes.
- Cheesy ranch potatoes: Add ½ cup of grated Parmesan cheese to the potatoes along with the ranch seasoning, then toss to coat. Or sprinkle 1-2 cups of shredded sharp cheddar cheese over the potatoes during the last few minutes of baking and let it melt.
- Loaded ranch potatoes: For a full meal based on these delectable little bites, top them with cheese and crumbled, cooked bacon, the dollop with sour cream and sprinkle with chopped green onions or chives.
- Don't crowd the pan: If you are doubling the batch, make sure to use two separate pans so the potatoes don't steam.
