Air Fryer Meatloaf

This juicy Air Fryer Meatloaf recipe is ready in around 30 minutes and makes a classic comfort food meal the whole family will love. Plus the ketchup brown sugar glaze is irresistible!

Ingredients

Meatloaf

  • 2 pounds lean ground beef
  • 1 Tablespoon minced onion
  • 2 teaspoons garlic powder
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 Tablespoon dried green onion
  • 1 cup breadcrumbs
  • 2 Tablespoons prepared horseradish
  • 1 large egg
  • 2 Tablespoons Worcestershire sauce

Glaze

  • ½ cup ketchup
  • ½ cup light brown sugar
  • ¼ cup apple cider vinegar

Instructions

  • Preheat the air fryer to 350°F.
  • In a large bowl mix the ground beef, salt, black pepper, garlic powder, paprika, minced onion, dried green onion, and breadcrumbs. You want to make sure to thoroughly mix all of the ingredients but try not to overmix the mixture which can result in tough, dry meatloaf.
  • Form the mixture into a loaf. Line the air fryer basket with a piece of parchment paper.
  • Place the meatloaf on top of the parchment paper. Place basket into air fryer.
  • Set timer and cook on air fry for about 15 minutes.
  • Now is a good time to make the glaze. In a small bowl mix the apple cider vinegar, ketchup, and light brown sugar.
  • When the timer goes off baste or spoon your glaze over top of the meatloaf.
  • Return to air fryer and set timer for an additional 10 minutes.
  • Check the inner temperature with a meat thermometer. It’s done when the internal temperature reaches 160°F.
  • Remove from the air fryer and allow to rest for ten minutes before slicing.

Notes

  • Storage: Keep leftover meatloaf in an airtight container in the fridge for 4-5 days. It makes excellent meatloaf sandwiches the next day.
  • Reheating: Leftover meatloaf warms up well in the air fryer, microwave, or oven. It's just 3-5 minutes in a 350°F air fryer for individual slices.
  • Freezing: You can freeze cooked or uncooked meatloaf for up to 3 months. Just wrap it well in plastic wrap and foil. To bake or reheat, thaw first in the fridge overnight and cook or rewarm in the air fryer, microwave, or oven.
  • Dairy-free: There is no dairy used in this recipe. Instead I added horseradish to help keep it moist, it does not add any spice to it. You really can’t even taste it, it just adds moisture. You can use the fresh prepared kind you find in the grocery store.
