Pork Chops With Apples and Onions

Ingredients

  • 4 bone-in center-cut pork chops
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons butter divided
  • 2-3 large apples cored and thinly sliced
  • 1 large white onion thinly sliced
  • ½ cup apple cider
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon brown sugar
  • ¼ teaspoon rubbed sage
  • ½ teaspoon thyme
  • chopped parsley

Instructions

  • Season both sides of the pork chops with salt and pepper.
  • In a large pan or skillet, melt half of the butter over medium heat. Add pork chops and cook until golden brown, about 2-3 minutes on each side. Remove from the pan and set aside.
  • Melt the remaining butter in the skillet and add the apples and onion. Stir occasionally and cook until softened, about 7-8 minutes.
  • In a small bowl, whisk together the apple cider, apple cider vinegar, brown sugar, sage, and thyme.
  • Pour apple cider mixture over the apples and onions and stir. Place the pork chops on top and simmer for 8-10 minutes, flipping halfway through.
  • Remove from heat, garnish with parsley, and serve immediately.

Notes

  • These cook times were tested with 1⁄2 inch thick pork chops.
  • If using a food thermometer, the internal temperature of a fully cooked pork chop will be about 145 degrees fahrenheit.
  • Thinly slicing the apples and onions will help minimize cook time. If you prefer softer apples and onions, continue to cook for an additional 2-3 minutes after simmering and removing the pork chops.
  • Optionally, you can garnish with additional thyme instead of parsley.
  • Recommended apples are Honeycrisp or Pink Lady. A good apple for cooking will be sweet, slightly tangy, and firm in texture. Granny Smiths are a great option if you prefer a tangier apple.
  • Leftover pork chops can be stored in the refrigerator for up to 3 days. To reheat, simply place the pork chops, apples, and onions in a baking dish, cover it with foil, and bake at 350ºF until heated through. You can also warm up leftovers in the microwave, but the texture won’t be quite as good.
  • To freeze, place the pork chops in a freezer bag or airtight container and they will keep for up to 3 months. To reheat, thaw the pork chops in the refrigerator overnight, then follow the instructions above for reheating.
