Season both sides of the pork chops with salt and pepper.
In a large pan or skillet, melt half of the butter over medium heat. Add pork chops and cook until golden brown, about 2-3 minutes on each side. Remove from the pan and set aside.
Melt the remaining butter in the skillet and add the apples and onion. Stir occasionally and cook until softened, about 7-8 minutes.
In a small bowl, whisk together the apple cider, apple cider vinegar, brown sugar, sage, and thyme.
Pour apple cider mixture over the apples and onions and stir. Place the pork chops on top and simmer for 8-10 minutes, flipping halfway through.
Remove from heat, garnish with parsley, and serve immediately.
